 Ingredients:

Grains/Extract/Sugars
9.1 lbs Bestmalz Pils
1.0 lbs Vienna
0.5 lbs CaraVienne   

Adjuncts/Random:
1.2 lbs cane sugar

Hops:
0.85 oz Sterling leaf @ 7.8 (80)
0.5 oz Sterling leaf @ 7.8 (15)
1.6 oz Sterling leaf @ 7.8 (dry, split over 2 additions)

Yeast:
3789 Trappist Blend (Orval)


Brewing Notes: 90 minute boil.

Mashed right around 154. Added 6.5 qts @ 212 which only brought it to 163. Let it sit 10 minutes, drained. Added 4 gal around 190 which brought to 170. Let sit 10 minutes, drained.

Boiled 90 minutes

Cooled to 73 (coolest I could get it), transferred to primary, pitched yeast & areated.

Added a smack pack which was honestly old (3 months from packing date) - hopefully it still had enough cells. Fermenting in the basement which is around 65 degrees.

Long primary. Transferred to secondary 7/28/09. SG = 1.008. Moving it to the basement so it is slightly cooler.

Dry hop 1: 8/30 - .8 oz
Dry hop 2: 9/2 - .8 oz
