 Ingredients:

Grains/Extract/Sugars
7 lbs Pale Dry Extract
1.5lbs Malted Rye
1lb US 6-row
1lb Pale Crystal
   

Adjuncts/Random:
.5lb Rice hulls

Hops:
.75oz Fuggles (60)
1oz Challenger (30)
1oz Challenger (5)

Yeast:
1272 - American Ale Yeast II


Brewing Notes: Teach a friend to Homebrew day with Paul
3 step mash.
90 for 30 minutes
122 for 30 minutes
147 for 90 minutes

Topped off way too much, resulting in 6.5 gallons of 1.040.

3 days later added 2 lbs (recipe called for 5) of light DME to bring gravity to 1.054. All kinds of crap in the airlock. I was convinced it was going to be infected.

Racked 11/15/05 - SG = 1.011. Doesn't taste all that bad. A bit thin and not hoppy enough but it isn't the horrible thing I expected.

Slightly cloudy copper body with a creamy, slightly off-white head that does a good job of sticking around. Nice lacing! Nose shows caramel, tea, faint fruits (strawberry, blueberry), honey. I gave it a 6 - I don't mean to imply that its bad - its just that I don't like English hops that much. Caramel up front, a bit of brown sugar/maple. A bit vegetal (I often percieve english hops this way) - tea, breadiness. A bit of twang in the finish.

The beer is very solid - just not what I really like. I need to read recipes more carefully from now on :)
