 Ingredients:

Grains/Extract/Sugars
9.25 lbs 2-row
4.00 lbs Munich
1.25 lbs Crystal @ 40 (recipe called for 20)   

Adjuncts/Random:
1 TBS Ph 5.1 (mash)
2 Tsp Gypsum (90)
.5 tsp Irish Moss (20)

Hops:
1.28 oz Centennial @ 8.6 (60)
1.16 oz Centennial @ 8.6 (20)
0.56 oz Centennial @ 8.6 (dry hop, 2 weeks)

Yeast:
US-05 dry


Brewing Notes: Grain @ 78. Added 21.9 qts, brought to 149 (was supposed to hit 151)
Added 5.5 qts @ 210 to hit 155 (supposed to be 160), wait 10 minutes
Collect

Add 10.25 qts @ 210 to raise to 170. Wait 10 minutes.
Collect

90 minute boil. Hop additions w. 60 minutes & 20 minutes remaining. Added Irish Moss at 20 minute addition.

Cooled to 75. Pitched. I somehow collected over 6 gallons here - not as aggressive a boil? 1.057 * 1.1 (I had shot for 5.5 gallons) = 1.0627.

Transferred to secondary 7/21, added dry hops. SG = 1.002. Why the heck are my finishing gravities always so low? Does my thermometer suck? Am I mashing too low?

Bottled 8/4/08. A total of 54 12oz bottles (5.06 gallons)
