 Ingredients:

6.75 lbs Bestmalz Pils
4.5 lbs Organic Unmalted Soft White Wheat (from the Lexington Co-Op)   

Adjuncts/Random:

Hops:
4 oz De-bittered Choice Hops (from Dickinsonbeer) (3h 40min)

Yeast:
Wyeast 3728 Lambic Blend


Brewing Notes: My first lambic. The soft white wheat was a giant pain to mill. I really hope that I have a motorized mill by the next time I use it.

Turbid mash schedule from Wild Brews:
4.5 qts @ 146 to hit 113, rest 15 min (I hit 118)
4.5 qts @ 212 to hit 126, rest 15 min (I hit 140. Added 2 qts of cold tap water to bring down to 133)
Removed 33% (1.75 qts) of liquid, brought to 190 degrees & held
6.75 qts @ 212 to hit 149, rest 45 min. (I used 6 quarts to make up for earlier suppliment, hit 149)
Remove 50% (5 qts) of liquid, add to already removed liquid, hold at 190.
6.75 qts @ 212 to hit 162, rest 30 min (I hit 162)
Transferred 6.75 qts liquid @ 190 + 9.25 qts from tun to kettle. Heated to 195, returned to mash to raise temp to 172, rest 20 min (I hit 171)
Drain.
Sparge w. 4.5 gallons @ 190. Hold 10 minutes, collect.
Tasting Notes: Boiled for 3 hours and 40 minutes. Cooled & transferred to the carboy. Collected about 4.5 gallons.
