 Ingredients:

Grains/Extract/Sugars
4# Bestmalz Pils
3# German Wheat
1# White Wheat

Only mash 7.5# of this. Set aside half a pound for the lactic fermentation.
   

Adjuncts/Random:
Ph 5.2

Hops:
.25oz Hellertrau
.25oz Willamette

Yeast:
Dry Nottingham


Brewing Notes: Step mash

7.8 quarts at 131 to bring to 120.
7.7 quarts at 212 to bring to 148 (something wrong here - should have been 5.7 to 154??)
11.5 quarts to COLLECT 6 gallons

cooled and split into 2 batches.

Batch 1 - 4.5 gallons, fermented with nottingham yeast

Batch 2 - 1.5 gallons which .5# of the unmashed grain was added to.

Combined batches on 10/28 - a bit of aeration as I was straining the grains out of the 1.5 gallon batch. Looks really freaking nasty.

Transferred to secondary 10/30. SG = 1.001
