Mash at 150.
Added 1oz white sugar to compensate for caramelized sugar that remained stuck to the pan. Next time I caramelize sugar FIND A BETTER WAY TO GET IT FROM THE PAN TO THE BOIL!
Mash with 3.4 gallons @ 173 to hit 150.
Sparge with 3.85 gallons @ 212 to bring to 180
Collected 6.5 gallons for a 90 minute boil.
Cooled to 70 before pitching.
Racked to secondary 8/19. SG = 1.018

unfortunately, much like the saison, seemed to be lacking the belgian yeast character. had more of a brown ale flavor to it. nice maltiness and caramelly sweetness. i think if you had gotten more belgian character out of the yeast you wouldve had a big winner with this one. actually, i think the same of the saison as well. maybe it was just fermentation temp...but dont hold me to that. 3.5
