 Ingredients:

Grains/Extract/Sugars
1 lb Muntons Light DME
6 lb Amber LME
1 lb Crystal (40)   

Adjuncts/Random:
1/3oz Burton Water Salts
Irish Moss
Yeast Nutrient
Fining Agent

Hops:
1 oz Target 8.5 AAU (60)
1 oz Styrian Goldings 3.4 AAU (15)
1 oz Fuggle 8.5 AAU (5)

Yeast:
Wyeast 1056


Brewing Notes: Activator pack started at 12:30pm the night before
Brought 2qt water to ~200 over the course of 40 minutes with grains steeping
Removed grain, added tea to 6g of water
Brought 6g of water to a boil. Removed from heat, added extracts, water salts, returned to heat and brought back to a boil.
Added Target
Added Styrian Goldings, Yeast Nutrient
Brought down to 80 degrees, pitched yeast. Activity noted the next morning.
Fermented between 60 and 64 for 10 days
Bottled w. priming sugar 1/25
Tasting Notes: First sampled 1/29 after brewing an Edmund Fitzgerald clone. Carbonation (obviously) isn't complete. This is the first beer I've really been proud of. A great malt/hop balance. More English than I would normally go for. A bit of diacteyl is present but it compliments the hops and malt nicely. Right now it kind of reminds me of Middle Ages Impaled Ale on cask. I'm very excited to see how this ends up!
